Delicious Rainy Day Soup Recipes

 

The family goes away for the day and leaves me with a big pot of turkey soup. I'm only too happy to eat it on Christmas Day, but I'm not sure what to do with the leftovers. If I don't want to go through all the effort of making more soup, how can I mix this up?

 

I've got a great idea: leftover turkey and tortellini soup! It's so easy to make, and it's delicious. All you need is some tortellini (you can use any pasta you like), one cup of cooked turkey meat, some celery, onion, garlic powder (optional), salt and pepper. To start, chop up your veggies into small pieces that can be easily swallowed if you're eating them with the soup. You'll also want to chop up a few stalks of celery into 1-inch pieces.

 

Now, put your veggies and celery in a large pot and add 4 quarts of water and a teaspoon of salt.

 

Ingredients:

 

Three tablespoons olive oil

 

Four garlic cloves smashed and chopped OK or minced (don't use powdered)

Time: 15 minutes to 1 hour, depending on the level of heat desired.

 

Roasted red pepper soup recipe:

 

Ingredients

· six whole green peppers, about 2 pounds, cut into 2-inch pieces

· one tablespoon olive oil · 3/4 teaspoon sugar · 1/2 teaspoon salt · Pinch of ground black pepper · 4 cups low-sodium chicken broth, divided

 

A crockpot is your best friend for making Mexican chicken soup. It takes minimal work and time to make this delicious dinner. You can throw chicken breasts, cans of drained beans, chopped onion, corn kernels, shredded cooked chicken, tomato sauce and spices into the crockpot. Cook on high for 4-5 hours or low for 8-10 hours. The top layer is tomato sauce mixed with corn kernels, and most of the liquid mixture has evaporated into that layer.

 

Then you shred up some cheese (but any cheese would do) on top of it before serving it with tortilla chips!

 

 

The first thing you want to do is take a can of tomato soup and cook it on the stove for about 10 minutes. Set aside.

 

Take another can of tomato soup and combine it with 2 cups chicken broth, 1 cup heavy cream, one tablespoon chipotle peppers in adobo sauce, one teaspoon dried cilantro flakes/chopped fresh cilantro leaves, salt & pepper. Whisk together until well blended. Pour this over the first pot of soup cooking on the stovetop for 10 minutes. Allow this to simmer for about 5-10 more minutes or until heated through (do not let boil). Stir occasionally to make sure it doesn't stick to the bottom of the pot too much; otherwise, your veggies will be hard as a rock by the time they get to the table. If you're feeling adventurous, you also want to add some tortilla strips (you can do this before or after the soup has been simmered).
